Apple Pie Cookies


As soon as I saw these Apple Pie Cookies from Oh, Bite It, I fell in love.

Wouldn't they be perfect little bites of heaven for winter!

Thankfully they agreed to let me share the recipe...

1 box of frozen Pillsbury Pie Crust (2 sheets per box)
Approx. 1 can of apple pie filling (just enough for a thin layer)
Approx. 1 cup of caramel sauce (just enough for a light coating)
1 egg (for egg wash)
2 tbsp cinnamon/sugar
1 tbsp nutmeg
Flour just for sprinkling
A round cookie cutter... any size you like

Lay out a sheet of pie crust, sprinkle it with some flour and slightly roll it out, just to increase its surface area.  Pour some of the caramel sauce (just enough to coat the crust) onto the crust and evenly spread it around, creating a thin layer of caramel.

Coarsely chop the apple pie filling into small pieces.

Top the caramel layer with a layer of the chopped up apple pie filling, making sure not to add too much pie filling.  Roll out the second sheet of Pie Crust the same size as the first sheet, and slice it into strips.

Create a lattice crust (just like on a pie) for the top of the pie filling.  DON’T do what I did and create the lattice on the counter, it’s not fun getting it on top of the bottom crust... ugh!  Create your lattice on top of the actual filling, as if it were a pie!

Dip your cookie cutter into some egg wash and cut out your Pie Cookies.  Brush the tops of them with some egg wash and sprinkle them with the cinnamon sugar and nutmeg.

Place them onto a baking sheet and bake them at 350F degrees for approx 20-25 minutes, until they’re golden and firm.  Let them cool just a little.



Filled Maraca Cookies


Here's another twist on the pinata cookie... Filled Maraca Cookies!  I found the recipe over at She Knows.


They're for Cinco De Mayo... unfortunately I came across the recipe too late.  I think they'd be great for any birthday party though!

The recipe calls for Nerds candy, but you can use whatever small candy you can get your hands on.

1 tube sugar cookie dough (or use the fab Cut Out Sugar Cookie recipe from Nigella Lawson)
1 cup green candy melts
1 cup tan candy melts
1 cup red candy melts
1/4 cup black candy melts
Nerds candies (or other small candy)
Pirouette rolled wafer cookies
Red Life Savers Gummies
 
Preheat oven to 350F degrees.  Roll 1-inch balls of sugar cookie dough and place inside the bottom half of a lightly greased cake ball pan.  Bake for 8-10 minutes.  Remove from oven and let cool for a few minutes.
 
Using a melon ball tool, lightly press the insides of each cookie to flatten and hollow.  Allow cookies to cool in pan for 5 more minutes.  Using a sharp knife, carefully loosen and remove cookies.  Repeat baking steps with remaining dough.


Group the cookie halves into pairs, and fill the bottoms with Nerds candies.  Melt tan candy melts in a microwave safe bowl, 30-seconds at a time, stirring after each heating, until melted.  Dip the open edge of the top cookie halves in candy melt.
 
Attach to the bottom pairs filled with Nerds.  Allow to cool and harden.   Any drips can be cleaned up with a knife after they're firm.


Cut Pirouette cookie sticks in half.  Insert a red Life Savers Gummies candy on the tip of each cookie stick.
 
 
Melt green candy melts in the microwave.  Dip the bottom 1/3 of each cookie ball in the green candy melt.

Flip them over and attach a Pirouette cookie stick with Life Savers Gummies.  Place in a drying rack or in a mini cupcake pan to cool and harden.
 
 
Reheat and melt the tan candy melts again in the microwave.  Dip the cookie balls with attached Pirouette sticks into the tan candy melt and coat the remaining cookie area.

Flip upright and place inside small glasses to cool and harden.
 
Melt red candy melts in the microwave.  Dip the top 1/3 of each cookie ball in the red candy melt.  Flip upright again and place inside glasses to cool and harden.  Melt black and white candy melts in microwave.  Using a paintbrush, add decorative stripes and dots to your maraca cookies.

Family-friendly recipe ~ Blueberry Muffins


Here's another easy and yummy recipe from Tracey ~ classic Blueberry Muffins.


These are very yummy and a great way to get kids eating blueberries.  The oil makes them a moist muffin.  I keep a packet of frozen blueberries in the freezer which makes this a quick and easy recipe.

2 cups flour
3 tsp baking powder
1 cup frozen blueberries
2 tsp custard powder (or cornflour)
1 cup sugar
1 cup milk
2 eggs
3/4 cup oil

Sift flour, custard powder and baking powder together.  Add the sugar and blueberries.
 
Beat the eggs, milk and oil together and add to the first mixture.  Spoon into muffin tins or paper cases.  

Cook at 190C degrees for 15-20 min.  Sprinkle icing sugar on top to serve.

Aussie Curves ~ Sequins


Sequin week has finally arrived at Aussie Curves!

For someone who loves sequins, I've gone for a relatively sedate look.

Apologies for the blah photos again... my inside pics never seem to turn out very well.



I scored this TS14+ tunic from Danimezza's last sale and really like that the sequins are a gorgeous gold/bronze colour.

It's not a great fit and the arm holes are huge, so I don't wear it as much as I'd like.
