has shared another wonderful gluten free recipe… Oatmeal Cookies.
Need a sweet treat but don’t want to indulge after the silly season? Oatmeal cookies!
Lucky for me I’m a Coeliac that can eat oats! If you cant, substitute oats with rice or quinoa flakes.
You can also substitute seeds for nuts or fruit for chocolate, these cookies can really be tailored to your taste.
½ cup brown sugar
¼ cup raw sugar
1 tsp vanilla essance
¼ cup buckwheat flour
½ tsp baking soda
Pinch of salt
3 tbsp milk (cows, soy or rice)
¼ cup pumpkin seeds
¼ cup sunflower seeds
¼ cup raisins
¼ cup dried cranberries
Preheat your oven to 180C degrees.
Cream the butter and sugars together until creamy. Add the vanilla and egg, mix to combine.
In a separate bowl sift the flours, baking soda and salt.
Add the flour mixture to the butter in three batches, alternating with the milk. Add the oats, seeds and fruit. Mix to combine.
Drop round tablespoons onto baking sheets. Bake for 12 minutes or until slightly golden around the edges.
